Pineapple Walnut Carrot Cake

Directions

  1. 1Whisk two sticks of butter until creamy.
  2. 2Add two blocks of cream cheese to the butter and continue whisking.
  3. 3Scrape down the sides of the bowl with a spatula to ensure everything is well combined.
  4. 4Add white vanilla extract, a pinch of cinnamon, and heavy cream to the cream cheese mixture.
  5. 5Mix well, then add powdered sugar and continue mixing until the cream cheese buttercream is smooth.
  6. 6Peel four large fresh carrots.
  7. 7Shred the peeled carrots using a grater.
  8. 8Trace the bottom of the cake pans onto parchment paper.
  9. 9Cut out the traced parchment paper circles.
  10. 10Line three cake pans with the parchment paper circles and spray with baking spray.
  11. 11Sift all dry ingredients (flour, baking powder, a pinch of salt, and cinnamon) into a bowl to avoid lumps.
