Sourdough Toast with Guacamole and Eggs

Directions
- 1Remove the top and bottom of the red onion.
- 2Cut the red onion in half.
- 3Slice the red onion.
- 4Dice the red onion.
- 5Transfer the diced red onion to a bowl.
- 6Cut the avocado in half around the pit.
- 7Twist the avocado halves to separate them.
- 8Remove the pit from the avocado.
- 9Scoop out the avocado flesh into the bowl with the red onion.
- 10Wash the baby plum tomatoes.
- 11Cut the baby plum tomatoes in half.
- 12Roughly chop the halved tomatoes.
- 13Add the chopped tomatoes to the bowl with avocado and onion.
- 14Season with salt, pepper, and chilli flakes.
- 15Mash and mix all the ingredients in the bowl to create guacamole.
- 16Add coconut oil to a pan and melt it.
- 17Place some baby plum tomatoes into the hot pan.
- 18Cook the tomatoes until softened, then mash them with a fork.
- 19Crack 4 eggs directly into the pan with the cooked tomatoes.
- 20Cook the eggs until the whites are set and the yolks are runny.
- 21Cut the sourdough bread in half.
- 22Toast the sourdough bread in a pan.
- 23Slice the cheddar cheese.
- 24Place the sliced cheddar cheese on top of the toasted sourdough bread.
- 25Spread a generous amount of guacamole over the cheese on the toast.
- 26Carefully place two cooked eggs on each piece of avocado toast.
- 27Cut the avocado toast into smaller, bite-sized pieces.
