One-Pan Mediterranean Chicken Dinner

Directions

  1. 1Mix the marinade ingredients: olive oil, lemon juice, minced garlic, finely chopped parsley, finely chopped mint leaves, salt, dijon mustard, dried oregano, and dried thyme.
  2. 2Pour 2/3 of the marinade over the chicken thighs, mix well, and set aside to marinate for 15-30 minutes or overnight.
  3. 3Cut all vegetables except for cherry tomatoes into thick slices.
  4. 4Place the cut vegetables and cherry tomatoes in an oven-safe tray in a single layer.
  5. 5Pour the remaining marinade over the vegetables and mix.
  6. 6Place the marinated chicken thighs, skin side up, over the vegetables in the tray. Brush the chicken with any remaining marinade from the chicken bowl.
  7. 7Spread Kalamata olives around the chicken and vegetables.
  8. 8Bake in the preheated oven for 20 minutes.
  9. 9Remove from the oven, sprinkle feta cheese over the vegetables, and spray the chicken skin with some olive oil.
  10. 10Broil for 5 minutes on the top rack until the chicken skin is crispy.
  11. 11Sprinkle with chopped parsley before serving.
