Greek Chicken Gyros with Tzaziki

Directions

  1. 1Prepare chicken thighs, removing bones and skin.
  2. 2Place the chicken between parchment paper and flatten with a rolling pin.
  3. 3Transfer the chicken to a bowl or a metal pan.
  4. 4Add olive oil, mustard, minced garlic, oregano, paprika, salt and black pepper to the chicken.
  5. 5Mix the chicken thoroughly with the seasonings.
  6. 6Prepare the chicken for the vertical cooking. Cut an onion in half and place it on a skewer in the middle of a baking pan.
  7. 7Stack the chicken thighs on the skewer, ensuring it forms a compact tower.
  8. 8Set your outdoor oven to 375°F.
  9. 9Place the chicken stack inside the oven.
  10. 10While the chicken is cooking, start making the dough for the flatbreads. In a bowl, combine flour and salt.
  11. 11Add Greek yogurt to the flour mixture.
  12. 12Mix and knead the dough until smooth.
  13. 13Divide the dough into small, equal portions.
  14. 14Roll out each portion into a flat, round bread.
  15. 15Cook the flatbreads in a pan until golden brown and slightly puffed.
