Directions

  1. 1In a hot oiled pan, start cooking down some ground beef.
  2. 2Properly break down the ground beef with a wooden spoon.
  3. 3When the ground beef looks cooked, squeeze in a little tomato paste.
  4. 4Season the beef with paprika, chipotle chili powder, oregano, and chili flakes.
  5. 5Properly salt the ground beef.
  6. 6Remove the ground beef off the heat when it's nice and brown.
  7. 7In the same pan, add onions and jalapeno and cook for a few minutes.
  8. 8Add fresh minced garlic and the same spices as earlier.
  9. 9Once the aromatics start to be fragrant, add some Rotel tomatoes.
  10. 10When the moisture is almost evaporated, add in some heavy cream and the same amount of milk.
  11. 11As the mixture heats up, add in chunks of jalapeno pepper jack.
  12. 12Add back in most of the ground beef.
  13. 13When lightly bubbly, add lots of shredded sharp cheddar.
  14. 14To serve, make one tiny layer of cheese on the top.
  15. 15Sprinkle the last bits of the ground beef in the center.
  16. 16Quickly throw this to the broiler for a couple minutes.
  17. 17Add some fresh greens to negate all those calories.

  • 1 lb ground beef
  • 1 tbsp tomato paste
  • 0.25 cup water
  • 1 tsp paprika
  • 1 tsp chipotle chili powder
  • 0.5 tsp oregano
  • 0.5 tsp red chili flakes
  • to taste salt
  • 1 medium onion
  • 1 jalapeño
  • 2 cloves minced garlic
  • 1 can (15 oz) Rotel tomatoes
  • 1.5 cups heavy cream
  • 1.5 cups milk
  • 8 oz cubed pepper jack
  • 12 oz sharp cheddar
  • to finish cilantro

Tips

  • You don't need a roux because the additives in pre-shredded cheese help bind it to the milk.
