Chole Bhature

Directions

  1. 1Mix maida, rava, sugar, baking soda, salt and oil well.
  2. 2Add curd and mix well to form a moist flour.
  3. 3Knead dough using half cup of water, without putting pressure.
  4. 4Add more water as needed to make a soft, non-sticky dough.
  5. 5Grease the dough with oil and let it rest for 2 hours.
  6. 6Boil soaked chana with tea bags, baking soda and salt for 5 whistles in a pressure cooker. Remove the tea bags.
  7. 7In a pan, saute oil, bay leaf, black cardamom, cardamom, cinnamon, cumin and kasuri methi until aromatic.
  8. 8Add chopped onion and ginger garlic paste and saute well until golden brown.
  9. 9Add turmeric, chilli powder, coriander powder, cumin powder, garam masala, aamchur and salt.
  10. 10Saute well until aromatic.
  11. 11Add the cooked chana, mix well and simmer for 10 minutes until flavours are absorbed.
  12. 12Pinch ball-sized portions of the rested dough, roll them gently and apply oil, then roll gently again until slightly thick.
  13. 13Deep fry the rolled dough in hot oil until golden brown, pressing gently to puff it up.

  • 0.25 tsp salt
  • 2 tbsp oil
  • 1 cup chana
  • 2 tea bags
  • 0.25 tsp baking soda
  • 1 tsp salt
  • 3 cup water
  • 1 tbsp ghee
  • 2 chilli
  • 0.25 tsp turmeric
  • 0.25 tsp chilli powder
  • 0.25 tsp garam masala
  • 2 tbsp coriander
