Paneer Butter Masala

Directions

  1. 1Start off by chopping 6 Roma tomatoes, slicing 1.5 cups of onions, peeling 3 garlic cloves, and finely chopping 1 inch of ginger.
  2. 2Prepare your yogurt masala mix by adding 3 tbsp of yogurt, 1 tsp of Kashmiri Chili powder, 1 tsp of Coriander powder, and 1 tsp of turmeric.
  3. 3Mix it up, add butter, and set it aside.
  4. 4In a pan set to medium-high heat, add 3 tbsp of Ghee, 2 bay leaves, 3 cloves and 2 cardamom pods.
  5. 5After 30 seconds, add ginger, garlic, and 2 Thai Green chilies. Cook for a minute before adding the onions.
  6. 6Keep stirring and cook till the onions turn translucent.
  7. 7Add the yogurt mix and let it cook for a few minutes before adding 2 dried red chilies, 18 cashews.
  8. 8Incorporate it and add tomatoes, salt to taste, and chili powder.
  9. 9Stir to combine and add just enough water to cover the tomatoes.
  10. 10Cover and let it cook till the tomatoes turn mushy.
  11. 11While that's happening, cut your paneer into cubes and soak in warm salted water to soften them up.
  12. 12Remove the whole spices and blend till smooth.
  13. 13I like to do a final Tadka which is optional, but I think it takes it to the next level.
  14. 14In a pan set to medium heat, add 4 tbsp of butter. Once it melts, add finely chopped onions and chili powder.
  15. 15Cook this till translucent and then add the blended gravy into this.
  16. 16Mix it up, taste it, and adjust salt amount and sugar to balance the flavors.
  17. 17Add more butter and crushed kasuri methi.
  18. 18Add the paneer and it's ready to serve with a final garnish of heavy cream and coriander.
