Paneer Paratha

Directions

  1. 1Combine atta, oil, salt, and warm water in a bowl to form a dough with a consistency similar to play-doh.
  2. 2Cover the dough with a damp paper towel and let it hydrate.
  3. 3Combine grated paneer, green chilies, cilantro, mint, garam masala, coriander, black pepper, salt, and frozen green garlic in a bowl.
  4. 4Flatten a small piece of dough, roll it out, add the paneer filling, pinch the edges closed, and roll it out again.
  5. 5Cook on a hot pan with a little oil until golden brown on both sides.

  • to taste paneer, grated
  • to taste green chilies
  • to taste cilantro
  • to taste mint
  • to taste garam masala
  • to taste coriander
  • to taste black pepper
  • to taste frozen green garlic

Tips

  • Rest the dough for at least 20-30 minutes to prevent the paratha from breaking while rolling.
  • Add water slowly to the dough; it should be soft but not sticky.
  • Seal the dough well and use light, even pressure when rolling to prevent the filling from tearing through.
  • Add onion last to avoid a watery filling; the creator notes onion should go in right before rolling.
  • Use ghee for flavor, or oil to keep it lighter.
  • If you do not have frozen green garlic, you can replace it with green onions and garlic.
  • Serve with mint chutney.
