Combine atta, oil, salt, and warm water in a bowl to form a dough with a consistency similar to play-doh.

Cover the dough with a damp paper towel and let it hydrate.

Combine grated paneer, green chilies, cilantro, mint, garam masala, coriander, black pepper, salt, and frozen green garlic in a bowl.

Flatten a small piece of dough, roll it out, add the paneer filling, pinch the edges closed, and roll it out again.

Cook on a hot pan with a little oil until golden brown on both sides.

2.5 cup atta
1 tbsp oil
to taste salt
to taste water, warm
to taste paneer, grated
to taste green chilies
to taste cilantro
to taste mint
to taste garam masala
to taste coriander
to taste black pepper
to taste frozen green garlic
Equipment

Tips
Rest the dough for at least 20-30 minutes to prevent the paratha from breaking while rolling.
Add water slowly to the dough; it should be soft but not sticky.
Seal the dough well and use light, even pressure when rolling to prevent the filling from tearing through.
Add onion last to avoid a watery filling; the creator notes onion should go in right before rolling.
Use ghee for flavor, or oil to keep it lighter.
If you do not have frozen green garlic, you can replace it with green onions and garlic.
Serve with mint chutney.
