Creamy Garlic Butter Steak Bites & Crispy Potatoes

Directions

  1. 1In a bowl, add diced potatoes with a bit of olive oil and the seasonings listed on screen.
  2. 2Mix it together.
  3. 3Air fry or bake the potatoes with the settings on screen (Air fryer: 200°C/400°F for 20-25 minutes, flipping halfway; Oven bake: 200°C/400°F for 25-30 minutes, flipping halfway).
  4. 4Grab your extra lean diced beef, add salt, garlic powder, onion powder, pepper, and mix it together.
  5. 5In a blender cup, add fat-free evaporated milk, grated parmesan, oregano, blend and set it aside.
  6. 6Cook the steak bites with light cooking oil spray on high heat until crispy.
  7. 7Lower the heat, add light butter and diced garlic, then mix it all together.
  8. 8Remove the steak bites.
  9. 9Add beef stock with the blended sauce, a bit of light cream cheese, some smoked paprika, and chicken stock powder.
  10. 10Mix it together and simmer until nice and creamy.
  11. 11Equally distribute the crispy potatoes, steak bites, and creamy garlic sauce into four servings and enjoy.

  • 900 g diced potatoes (raw weight, Coles Carisma potatoes used - around 25% lower carb than standard potatoes, can swap for spud lite or regular potatoes)
  • 1 tsp olive oil
  • 900 g extra lean diced beef (Woolworths Heart Smart or any lean cut beef)
  • 5 garlic cloves, finely chopped
  • 20 g light butter (Nuttelex Light)
  • 1 tsp salt
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp dried parsley (potatoes only)
  • 2 tsp smoked paprika (potatoes only)
  • 300 ml fat free evaporated milk (Carnation Light & Creamy or low fat milk)
  • 20 g freshly grated parmesan
  • 1 tsp dried oregano
  • 150 ml beef stock
  • 75 g light cream cheese (or light Laughing Cow wedges)
  • 1 tsp smoked paprika
  • 2 tsp chicken stock powder (low sodium)
