Directions

  1. 1Buy an unsmoked gammon joint and soak it in water for 48 hours before cooking.
  2. 2Remove the netting and place the gammon in a deep pan with onions, carrots, celery and ginger beer.
  3. 3Top up with water and bring to a boil then reduce to a simmer for around two hours, turning halfway through.
  4. 4Check the internal temperature has reached 75 degrees.
  5. 5Trim off the fat and chop it up.
  6. 6Make a glaze by mixing brown sugar, honey and mustard.
  7. 7Pour half of the glaze over your ham and brush it into all the crevices.
  8. 8Bake in the oven for around 15 minutes or use the air fryer.
  9. 9Add the rest of the glaze and cook for another 15 minutes.
  10. 10Strain the liquid from the pan and store it in a sterile jar in the fridge.
  11. 11Reduce the liquid down into ice cubes.
  12. 12Slice the ham thinly and pour the juices from the glaze over it.
  13. 13Store the sliced ham in a Tupperware box in the fridge for around a week.
