Directions

  1. 1Heat a glug of oil on a non-stick pan over low-medium heat.
  2. 2Add onion, garlic, ginger and let cook until the onions are translucent.
  3. 3Add leeks and spinach and cook until the leeks are completely soft and the spinach wilted (add a splash of water if too dry).
  4. 4While they cook make the cheesy sauce. Blend yogurt, miso and nutritional yeast and set aside.
  5. 5Transfer 2/3 of the cooked veggies in a blender and blend with silken tofu, nooch and miso until creamy.
  6. 6Add the sauce back to the pan along with the butter beans, stir to warm through.
  7. 7Serve topped with the cheesy sauce, lemon juice, a drizzle of oil, a crack of black pepper and basil.

  • 250 g fresh baby spinach
  • 300 g silken tofu
  • 3 tbsp nutritional yeast
  • 1 tbsp miso
  • 570 g butter beans
  • 0 evo oil
  • 0 black pepper
  • 0.5 juice 1/2 lemon
  • 0 fresh basil
  • 150 g high protein vegan yogurt
  • 1 tbsp miso
  • 2 tbsp nutritional yeast
