Directions
- 1Add chopped tomatoes, minced garlic, fresh thyme, salt, pepper and olive oil to a bowl and put in the oven.
- 2Cut the eggplant in half.
- 3Place in the oven.
- 4Cut another eggplant in half.
- 5Make cuts lengthwise and crosswise.
- 6Fry in oil until brown on both sides.
- 7Remove from heat.
- 8Mash the roasted tomatoes.
- 9Saute hot dogs or sausages in a pan.
- 10Add olives and colored peppers.
- 11Saute for a couple of minutes.
- 12Add mozzarella and cover until the cheese melts.
