Italian Sausage Bow Tie Pasta

Directions

  1. 1Bring a large pot of water to a boil.
  2. 2Cook pasta according to package directions; drain.
  3. 3Meanwhile, in a large skillet, add the olive oil.
  4. 4Cook and crumble the sausage and red pepper flakes over medium-high heat until cooked through and browned.
  5. 5Add onion and garlic.
  6. 6Cook until onion is tender.
  7. 7Add the tomatoes and heavy cream.
  8. 8Simmer until the mixture thickens, about 10 minutes.
  9. 9Add the spinach and cook an additional 3 minutes.
  10. 10Add the cooked pasta to the sauce.
  11. 11Sprinkle with parsley, if desired.

  • 2 tablespoons olive oil
  • 1 pound mild Italian sausage, casings removed
  • 0.5 teaspoon red pepper flakes, optional
  • 0.5 cup diced onion
  • 4 cloves garlic, minced
  • 1 can Italian-style plum tomatoes, drained and coarsely chopped
  • 1.5 cups heavy cream
  • 1 cup packed spinach leaves, cut into thin strips
  • Fresh parsley, minced (optional)

Tips

  • Use whatever kind of Italian sausage you prefer – mild, sweet, or hot. Turkey Italian sausage can also be used.
  • If using Italian sausage with casings, cut the casings open and use the ground meat.
  • For every 1 cup of heavy cream, melt 1/4 cup of butter and slowly whisk in 3/4 cup milk as a substitute.
  • Leftovers are great reheated for lunch the next day.
