Mutton Khaas Tikka

Directions

  1. 1Add salt to taste to the mutton.
  2. 2Add 1 spoon of yellow chilli.
  3. 3Add 1 spoon of red chilli.
  4. 4Add 4 spoons of ginger garlic paste.
  5. 5Add 4 spoons of papaya paste.
  6. 6Mix everything well with the mutton.
  7. 7Add 1 spoon of turmeric.
  8. 8Add 50 ml of oil.
  9. 9Mix well and let it rest for one hour.
  10. 10In a plate, add 1 spoon of cumin, 10 cloves, 6 big cardamoms, 6 green cardamoms, 1 spoon of black pepper, and 6 star anise. Grind them to make a special masala.
  11. 11Add the special masala to the mutton.
  12. 12Add 2 spoons of roasted chana powder for binding.
  13. 13Place a small bowl with hot coals in the center of the mutton mixture.
  14. 14Pour desi ghee over the hot coals to create smoke (Dungaar).
  15. 15Heat desi ghee in a pan.
  16. 16Place the marinated mutton pieces into the hot pan.
  17. 17Cover the pan and cook on low heat with the desi ghee until done.
  18. 18Stir occasionally until the mutton is cooked through and dry.
  19. 19Add fresh coriander for garnish.
