Cheese Buldak (Spicy Fire Chicken with Cheese)

Directions

  1. 1Prepare the spicy paste by combining hot pepper flakes, hot pepper paste (gochujang), soy sauce, cooking oil, ground black pepper, rice syrup, minced garlic, and minced ginger.
  2. 2Chop green onions for garnish later.
  3. 3Prepare mozzarella cheese by shredding or dicing it.
  4. 4Mix the prepared paste until thick.
  5. 5Trim any yellow fat from the chicken breast and dice it into one-inch cubes.
  6. 6Mix the chicken with the spicy paste thoroughly.
  7. 7Lightly oil a pan and cook one cup of sliced rice cake until both sides are slightly crispy, then turn off the heat.
  8. 8In a thick frying pan (or a cast iron pan lid if available), add 1/4 cup of water to clean out any remaining paste from the mixing bowl and add it to the pan.
  9. 9Add the chicken mixture to the pan and cook on medium-high heat for about 10 minutes, stirring occasionally. If using a normal pan, it might take less time.
  10. 10Reduce the heat to low, mix in the cooked rice cake, cover the pan, and cook for another 10 minutes.
  11. 11Preheat the broiler while the chicken is simmering on low heat.
  12. 12After 10 minutes on low heat, check the chicken and mix everything well, making sure the rice cake is crunchy.
  13. 13Spread the chicken and rice cake mixture evenly in the pan.
  14. 14Cover the entire dish with mozzarella cheese.
  15. 15Place the pan under the preheated broiler for a couple of minutes until the cheese is golden brown and bubbly.
  16. 16Carefully remove the hot pan from the broiler.
  17. 17Garnish with chopped green onions before serving.
