Directions

  1. 1Cut the pork belly into 2-inch chunks.
  2. 2Fry the pork belly chunks in a pan on all sides to develop a nice sear.
  3. 3Add bay leaves, crushed garlic, whole black peppercorns, and brown sugar to the pan.
  4. 4Stir the pork with the aromatics and let the sugar caramelize.
  5. 5Pour in soy sauce, vinegar, and water.
  6. 6Cover the pan and let it simmer for at least 45 minutes.
  7. 7Bring the sauce to a boil and reduce the liquid until it becomes sticky and thick.

Tips

  • Serve immediately or let it sit in the fridge overnight. Adobo is often even better the next day.
