1Whisk together the warm water, honey, and instant yeast in a large mixing bowl.
2Mix in the all-purpose flour and salt using a spatula until you have a shaggy dough.
3Transfer the dough to a clean surface and knead, using your hands, for about 3-5 minutes, or until you have a nice smooth dough.
4Transfer the dough back to the mixing bowl and cover with a clean kitchen towel. Place the bowl somewhere warm for about 1-2 hours, or until the dough has doubled in size.
5Transfer the dough to a clean, floured surface.
6Flatten the dough into a rectangle (about 1 cm thick), using your hands.
7Fold the long sides of the baguette dough towards the center in three folds, like a letter, then pinch the seam closed tightly.
8Roll and shape into two equal-sized logs and then place them seam down, on a parchment paper–lined baking sheet. Place this somewhere warm for about 1 hour, to rise once again.
9Preheat your oven to 450°F.
10Using a sharp knife, score the baguettes.
11Sprinkle the loaves with all-purpose flour, to give them a rustic feel.
12Bake for 25-30 minutes, or until golden brown.
