French Onion Pot Roast

Directions

  1. 1Smack your chuck roast onto a cutting board and pat it dry with a paper towel.
  2. 2Salt and pepper both sides of the chuck roast.
  3. 3Chuck the seasoned roast into your favorite cast iron pan to sear.
  4. 4While searing, get your Crock-Pot and a mixing bowl.
  5. 5Drop in one sliced onion, one packet of beefy onion soup mix, two to three minced garlic cloves, and two cans of French onion soup into the mixing bowl.
  6. 6If you have time, add some thyme to the mixture.
  7. 7Mix all the ingredients in the bowl until beautifully combined.
  8. 8Pour half of the mixture into the bottom of the Crock-Pot.
  9. 9Carefully place the chuck roast into the Crock-Pot.
  10. 10Add the rest of the mixture right on top of the roast.
  11. 11Add enough unsalted butter to make you happy.
  12. 12Don't forget to add the pan drippings from searing the roast.
  13. 13Throw the lid on and set the Crock-Pot to low for 8 to 10 hours.
  14. 14When the time is up, take the lid off.
  15. 15Shred the meat if it falls apart easily when you try to pick it up.
  16. 16Grab a plate with some mashed potatoes and cover it in meat and sauce.
  17. 17If you have parsley, sprinkle it on top to make it look fancy.
  18. 18Grab a fork, scoop up a big old bite, and enjoy.
