Bocelli’s Famous Meatballs

Directions

  1. 1Cut day-old bread into small cubes.
  2. 2Pour milk over the bread cubes in a bowl.
  3. 3Add veal, beef, and pork to a large bowl.
  4. 4Add eight eggs to the meat.
  5. 5Add fresh parsley to the meat and eggs.
  6. 6Add Pecorino cheese to the mixture.
  7. 7Add Parmigiano cheese to the mixture.
  8. 8Season with salt.
  9. 9Season with pepper.
  10. 10Crush Italian oregano in your hand to separate the leaves and add to the mixture.
  11. 11Crush and mince garlic.
  12. 12Add minced garlic to the mixture.
  13. 13Add the milk-soaked bread to the mixture.
  14. 14Mix all ingredients thoroughly with your hands until well combined.
  15. 15Add Italian breadcrumbs to the mixture.
  16. 16Form the mixture into individual meatballs.
  17. 17Place the formed meatballs into a pot of simmering red sauce.

Tips

  • Use a mix of veal, beef, and pork for the meatballs.
  • Add two eggs for every pound of meat.
  • Crush the Italian oregano in your palm to separate the leaves from the stem bits, as the stem bits should not be in the meatballs.
  • Do not put onions in the meatballs; use only garlic.
