1Mix cottage cheese, greek yoghurt, light mayo, chipotle paste, lime juice, honey, garlic powder and salt to taste in a blender.
2Blend the mixture to completely smooth, then pour into a bowl.
3Add ground beef to a pan with some cooking spray.
4Let the beef get a crispy sear, then add taco seasoning and mix well to fully coat.
5Add your taco beef to a bowl with all of that chipotle sauce, cheddar and mozzarella and chopped cilantro.
6Mix well to form your filling.
7On a warmed tortilla, add 1/10th of your beef mix.
8Fold in the sides and roll it up tightly, repeating until you have 10 rolls.
9Give them a spray and sprinkle with parsley.
10Bake or air fry with these settings.
11Store in the freezer and reheat when you're ready to eat.

Tips
Wrap in foil and store in the freezer for months.
To reheat, unwrap from the foil, wrap in a paper towel and run under water, squeeze of the excess and microwave 4-6 minutes, unwrap carefully from the paper towel air-fry or toast in the pan for a couple minutes to get crispy and enjoy!
