Directions

  1. 1Preheat oven to 350°F.
  2. 2Grease and line an 8x8 inch pan with parchment paper.
  3. 3In a mixing bowl, blend cream cheese, egg, vanilla extract, sour cream, cornstarch, and sugar until smooth using a blender for the cream cheese layer.
  4. 4Brown butter in a saucepan over medium-low heat, stirring every 10 seconds.
  5. 5Once the butter turns golden brown, transfer it to a heatproof bowl.
  6. 6Add cocoa powder, oil, vanilla, chopped chocolate, vinegar, and food color to the browned butter. Mix and let the mixture cool at room temperature for 15-20 minutes.
  7. 7In another bowl, whisk eggs and light brown sugar for 4-6 minutes until dissolved and the mixture turns into a light pale color.
  8. 8Add powdered sugar and mix until fully combined for 1-2 minutes.
  9. 9Combine the egg mixture with the browned butter mixture, mixing until combined.
  10. 10Add flour and chocolate chips to the batter. Mix until just combined, being careful not to overmix at this stage.
  11. 11Transfer half of the brownie mixture to the prepared pan.
  12. 12Reserve 30g / 2-3 tbsp of the cream cheese mixture; add the remaining mixture on top of the brownie layer.
  13. 13Top with the remaining brownie batter.
  14. 14Add the reserved cream cheese mixture on top.
  15. 15Make swirls in the batter.
  16. 16Bake for 40-45 minutes or until the edges are golden and the center is slightly fudgy.
  17. 17Let cool completely before cutting.

  • 0.25 cup granulated sugar
  • 1 tsp cornstarch
  • 0.5 tsp vanilla extract
  • 2 tbsp sour cream, room temp
  • 1 large egg, room temp
