Directions

Place the boneless, skin-on chicken thighs skin side down in a cold pan.

Turn the heat to medium-high.

Season the chicken with salt and pepper.

Allow the pan to warm up and cook the chicken for about 25 minutes until the skin is nice and golden brown.

Set the cooked chicken aside to rest.

Deglaze the same pan with onions, garlic, and chilies.

Add a little cooking wine to the pan.

Add soy sauce, a little spoon of miso paste, honey, and rice vinegar to the pan.

Thicken the sauce with a cornstarch slurry.

Add the crispy chicken back into the pan to coat it with the sauce.

Serve with rice and green onions.
