Peel 1 kg of potatoes.

Add water and 1 tablespoon of salt to a pot and bring to a boil.

Add peeled potatoes and boil for 15 to 20 minutes, then check the softness and remove from water, allow to cool slightly.

Slice 2 medium onions.

Add 2 tablespoons of olive oil to a pan, then add the sliced onion and sauté for 5-6 minutes.

Chop 200g of bacon.

Add the chopped bacon to the pan and cook for 4-5 minutes.

Add 1/2 cup (120ml) white wine and cook for 2 minutes over low heat, then turn the heat off.

Slice the potatoes.

Rub the bottom of a baking dish with a clove of garlic.

Spread half of the potatoes on the bottom of the baking dish.

Add salt and black pepper.

Add the onion and bacon mixture.

Add the rest of the potato mixture on top, then add salt and black pepper.

Add 2/3 cup (160ml) of cream.

Cut the Reblochon cheese half crosswisw and then cut each half in half.

Arrange cheese quarters on top of the dish.

Bake for 25-30 minutes at 400f/200c.
