One-Pot Mexican-Inspired Rice with Beef and Cheese

Directions

  1. 1Add 1 pound of ground beef to a pan and brown it using a meat chopper.
  2. 2Season the browned ground beef generously with taco seasoning mix.
  3. 3Pour 2 cups of water into the pan with the ground beef.
  4. 4Add one can of no-salt-added diced tomatoes to the mixture.
  5. 5Add one can of green chilies to the pot.
  6. 6Once everything is mixed, add 2 cups of Minute Rice to the pan.
  7. 7Give all ingredients a good mix and then cover the pot with a lid to cook the rice thoroughly.
  8. 8Once the rice is fully cooked, top the mixture with Mexican cheese.
  9. 9Place the lid back on the pot to allow the cheese to melt completely.
  10. 10Serve the cooked beef and rice mixture on a tortilla.
