Queso Chicken & Rice

Directions

  1. 1Start by grabbing three large chicken breasts.
  2. 2Add a tablespoon of avocado oil and tenderize the chicken breasts.
  3. 3Season with your favorite taco seasoning until it looks like it's well covered.
  4. 4Rinse the 300g basmati rice by soaking it in cold water and mixing it, repeating the process a couple of times until the water runs clear.
  5. 5Cook the rice by adding it to a pot with 450ml of water, bringing it to a boil, then reducing heat to low, covering it, and letting it cook for 15 minutes, removing from heat, keeping covered, and letting it sit for another 10 minutes.
  6. 6While the rice is cooking, toss the seasoned chicken in the air fryer at 375 degrees for 12 minutes.
  7. 7For the high-protein queso sauce, combine 250g 2% Plain Greek yogurt, 85g red enchilada sauce, 85g pico de gallo, 85g cheddar cheese, 100g 1/3 fat cream cheese, 65g diced green chiles, 20g nutritional yeast, 10g brown sugar, 1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt in a pan.
  8. 8Heat the sauce over very low heat until everything melts and mixes together.
  9. 9Add chopped cilantro to the sauce and mix it well.
  10. 10Serve the cooked chicken breast sliced over a bed of rice, then pour the queso sauce over the chicken and rice. Enjoy!

Tips

  • Always rinse your rice.
  • For the queso sauce, you can use Greek yogurt or blended cottage cheese, depending on your preference.
  • Heat the queso sauce over very low heat to melt and mix ingredients together.
  • Even though it doesn't look like it, each serving is only 500 calories and has over 40 grams of protein.
