1Combine flour, sugar, yeast, and salt in a stand mixer. Add warm milk, egg, egg yolk, and melted butter. Mix and knead with the dough hook for 8–10 minutes until smooth and stretchy, keeping the dough soft and avoiding extra flour.
2Cover the dough and let it rise until doubled.
3For the apple goo, melt butter in a skillet, add apples, and cook for 3-4 minutes. Stir in brown sugar, cream, cinnamon, lemon juice, and salt, then simmer for 2-3 minutes. Mix cornstarch and water, add to the skillet, and cook for 1 minute until thickened and glossy. Stir in vanilla and let cool.
4Mix sugar, cinnamon, and salt in a bowl. Grease a Bundt pan well.
5Cut the risen dough into 45–55 pieces. Dip each piece in melted butter, then roll in the cinnamon-sugar mixture.
6Assemble by layering 1/3 of the apple goo, 1/2 of the dough pieces, 1/3 of the apple goo, the remaining dough, and finally the remaining apple goo.
7Cover and let rise.
8Bake at 350°F until golden and bubbling, checking that the center reaches 190–195°F. Tent with foil if browning too quickly.
9Cool in the pan before inverting.
10Whisk glaze ingredients together and drizzle over the warm monkey bread.

Tips
