Padakjeon (Korean-style Pan-fried Chicken with Green Onion)

Directions

  1. 1Chop chicken thighs into bite-sized pieces.
  2. 2Marinate the chicken with cooking wine, salt, and pepper.
  3. 3Chop green chili peppers and red chili peppers.
  4. 4Thinly slice garlic cloves.
  5. 5Mix the chicken with chili peppers, sliced garlic, fish sauce, potato starch, and water.
  6. 6Heat oil in a pan over medium heat.
  7. 7Spoon the chicken mixture into the pan and spread slightly.
  8. 8Fry the chicken for 4–5 minutes per side until golden and cooked.
  9. 9Thinly slice green onions.
  10. 10Soak the sliced green onions in ice water.
  11. 11Drain the green onions after 10 minutes.
  12. 12Combine soy sauce, cooking wine, mulyeot, minced garlic, and sugar to make the sauce.
  13. 13Layer the cooked chicken on a plate.
  14. 14Top the chicken with the prepared green onions.
  15. 15Drizzle the sauce over the green onions and chicken.

  • 1 tbsp minced garlic (for sauce)
  • 1 tbsp fish sauce
  • 0.5 cup potato starch
  • 4 tbsp water
  • 3 green onions, thinly sliced
  • Oil for frying
  • 2 tbsp soy sauce
  • 2 tbsp cooking wine (matsul)
  • 2 tbsp mulyeot (Korean corn syrup)
  • 1 tbsp minced garlic
  • 1 tbsp sugar
