Homemade Italian Salad Dressing

Directions

  1. 1Mix olive oil with a neutral oil, such as avocado oil, to prevent the dressing from becoming bitter in larger batches.
  2. 2Combine half a cup of Greek extra virgin olive oil with three-quarters of a cup of avocado oil.
  3. 3Dip your measuring spoon in oil before adding a teaspoon of Dijon mustard to ensure it falls out easily.
  4. 4Add two garlic cloves to the mixture.
  5. 5Add half a teaspoon of sea salt, a quarter teaspoon of black pepper, and two teaspoons of oregano.
  6. 6Optionally, add one teaspoon of sugar or honey if you are anti-sugar.
  7. 7Shake the dressing vigorously.
  8. 8Add a quarter cup of red wine vinegar to the dressing.
  9. 9Taste and adjust as needed.
  10. 10Store the dressing in the fridge and shake before every use.

Tips

  • When trying to get Dijon out of a measuring spoon, dip the spoon in oil first to prevent sticking.
