Passover Cabbage Kugel

Directions

  1. 1Preheat oven to 400°F. Line two sheet pans with parchment paper.
  2. 2Spread shredded cabbage across both pans. Add thinly sliced onion, drizzle with oil, season with salt and pepper, and toss.
  3. 3Roast in the oven for about 12 minutes until slightly softened and just beginning to caramelize.
  4. 4Transfer the roasted cabbage mixture to a large bowl.
  5. 5Grate in one shredded apple with the peel on.
  6. 6Add 7 large eggs to the bowl.
  7. 7Add potato starch, garlic powder, and raisins (optional) to the mixture.
  8. 8Add a little more salt, pepper, and honey or sugar.
  9. 9Mix all ingredients together well.
  10. 10Lower oven to 375°F.
  11. 11Pour the mixture into a greased 9x13 baking dish and mash it down.
  12. 12Sprinkle chopped sweet candied pecans evenly over the top.
  13. 13Bake for 45-55 minutes until set and deeply golden. The pecans will toast as it bakes.
  14. 14Cool slightly before slicing and serving.

  • 0.33 cup potato starch
  • 0.25 cup oil (avocado or neutral)
  • 3 tbsp sugar or honey
  • 1.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 0.33 cup golden raisins
  • 0.5 cup chopped sweet candied pecans

Tips

  • Use large eggs, not extra large, to avoid an eggy kugel.
  • Bake in a non-disposable baking tray for nice crusty edges.
  • Mash the kugel down into the tray before baking.
