Season the boneless chicken thighs with pepper and salt.

In a bowl, mix soy sauce, mirin, honey, fresh ginger and garlic.

Heat oil in a frying pan over medium heat.

Add the chicken to the frying pan, skin side down, and pan-fry for four minutes.

Flip the chicken and cook for another four minutes.

Set chicken aside.

Simmer the honey ginger sauce for about 30 seconds.

Add the chicken back to the pan and cook for two to three minutes.

Serve the honey ginger chicken over rice with broccoli and garnish with sesame seeds and spring onions.
