Melt butter in a skillet and cook chopped bacon just until it starts to render.

Add jalapenos, onions, salt, and garlic to the skillet and let everything soften.

Pour in the pinto beans and chicken broth.

Cook for about 10 or 15 minutes.

Carefully pour the mixture into a blender, leaving the lid spout open.

Blend until the mixture is silky smooth.

Return the blended mixture to the pan to thicken up a bit.

Top with cheese and enjoy with chips or rolled inside of burritos.
Ingredients
2 tablespoons butter
4 or 5 strips of bacon
0.5 large yellow onion, chopped
2 fresh jalapeños, sliced (seeds and membrane removed)
1 teaspoon sea salt
1 tablespoon minced garlic
2 40 ounce cans Sun Vista pinto beans, partially drained
0.75 cup chicken broth
Shredded sharp cheddar cheese

Tips
Leave the blender lid spout open while blending to prevent bursting.
For a crunchy bacon texture, cook bacon, set aside, dice, blend everything else, and then add the bacon back in.
