Chicken Teriyaki

Directions

  1. 1Add mirin to a jar.
  2. 2Add sake to the jar.
  3. 3Add Japanese soy sauce to the jar.
  4. 4Add white sugar to the jar.
  5. 5Shake the jar to mix the ingredients.
  6. 6Debone the chicken thighs.
  7. 7Cut out excess fat from the chicken thighs.
  8. 8Place the reserved bones in a bowl.
  9. 9Toss the reserved bones in a little bit of oil.
  10. 10Roast the bones in a 400-degree Fahrenheit oven until golden brown.
  11. 11Deglaze the baking sheet with soy sauce.
  12. 12Return the soy sauce and bones to a pot.
  13. 13Simmer for about 10 minutes.
  14. 14Strain the chicken-based soy sauce.
  15. 15Season the debone chicken thighs with salt and pepper.
  16. 16Cook the chicken thighs skin-side down in a pan.
  17. 17Press the chicken thighs with a metal tool to ensure even cooking.
  18. 18Let your chicken rest.
  19. 19Add sliced garlic and grated ginger to the pan.
  20. 20Sauté for a couple of minutes.
  21. 21Add the chicken-based teriyaki sauce to the pan.
  22. 22Add a cornstarch slurry to thicken the sauce if needed.
  23. 23Whisk the sauce and cornstarch slurry.
  24. 24Add sesame seeds to the sauce.
  25. 25Serve the cooked chicken with the teriyaki sauce.

Tips

  • The trick is to buy chicken thighs that have the bone in and the skin on and then take out that bone yourself.
  • Instead of using regular soy sauce, use chicken-based soy sauce.
