Directions

  1. 1Start by slicing onions, scallions and cutting chicken thighs into bite-sized pieces.
  2. 2Now, in a pan, heat together water, hondashi, soy sauce, sake, mirin and sugar.
  3. 3Once it comes to a simmer and the sugar is dissolved, add the onions and chicken.
  4. 4Let that simmer until the chicken is fully cooked, which will take about 8 to 10 minutes.
  5. 5Then add the sliced scallions on top.
  6. 6Now, very lightly beat a couple of eggs.
  7. 7Slowly pour it on top and cover with a lid for about a minute or so until the eggs are fully cooked through.
  8. 8Serve it on top of a bowl of hot short-grain rice and garnish with some shredded nori.

  • 0.5 tsp hondashi
  • 1 tbsp soy sauce
  • 1 tbsp sake
  • 2 tbsp mirin
  • 1 tbsp sugar
  • 2 eggs
  • short grain rice
  • shredded nori
