Start by slicing onions, scallions and cutting chicken thighs into bite-sized pieces.

Now, in a pan, heat together water, hondashi, soy sauce, sake, mirin and sugar.

Once it comes to a simmer and the sugar is dissolved, add the onions and chicken.

Let that simmer until the chicken is fully cooked, which will take about 8 to 10 minutes.

Then add the sliced scallions on top.

Now, very lightly beat a couple of eggs.

Slowly pour it on top and cover with a lid for about a minute or so until the eggs are fully cooked through.

Serve it on top of a bowl of hot short-grain rice and garnish with some shredded nori.
