Layer equal parts of chopped mint leaves and sugar into a jar.

Add a generous drizzle of lemon juice to the jar and press gently.

Close the lid and let the mixture sit in the fridge for 48 to 72 hours, giving it a quick mix every day.

Strain the syrup into a clean jar and store in the fridge.

Tips
Use white granulated sugar as other types will alter the taste.
If the mixture takes longer than expected to macerate, it is likely due to too much sugar; add a little water to help it dissolve.
