Homemade French Fries

Directions

  1. 1Peel the potatoes.
  2. 2Cut the potatoes into shoestring-sized fries.
  3. 3Rinse the cut fries under water using a colander.
  4. 4Place the fries in an ice bath for a few minutes while water boils.
  5. 5Add white vinegar to a pot of boiling water.
  6. 6Add the french fries to the boiling water and boil for about six minutes until bendable but not breakable.
  7. 7Strain the fries.
  8. 8Run cold water over the fries to stop the cooking process.
  9. 9Lay the french fries on a paper towel-lined sheet pan.
  10. 10Pop the sheet pan with fries into the freezer for about an hour.
  11. 11Take the french fries out of the freezer.
  12. 12Drop the french fries into 300° oil.
  13. 13Once the fries start floating, pull them up and place them on a rack to blanch them.
  14. 14Increase the oil temperature to 375°.
  15. 15Drop the french fries into the 375° oil again to get them crispy.
  16. 16When the fries reach a golden brown color, take them up.
  17. 17Salt the fries while they are still wet.

Tips
