2Put them in the oven at 400 for about an hour or until they're nice and soft.
3When they come out of the oven, let them cool down before scooping out the insides. Make sure not to scoop out too much because you don't want the potatoes to break.
4While that's cooling down, you're going to sauté some shrimp in a pan with some butter.
5Combine shrimp, insides of potatoes, chives, butter, cheese, and heavy cream, then season.
6For the sauce, sauté some garlic and onions.
7Add a little white wine, heavy cream, and parmesan cheese, then season.
8Let the sauce thicken up a little bit.
9Stuff the potatoes with the filling, put them back in the oven for another 10 minutes.
