Taco Stuffed Sweet Potatoes

Directions

  1. 1Take 4 large washed sweet potatoes and poke some holes in them using a knife.
  2. 2Microwave the sweet potatoes two at a time for 5 to 7 minutes, flip them over and then microwave for another 5 to 7 minutes until they are soft on the inside.
  3. 3Cook 1 pound of grass-fed organic ground beef 90/10 in a pan over medium-high heat until it's almost fully cooked.
  4. 4Add water and one packet of mild taco seasoning to the beef and beat your meat.
  5. 5Cut the sweet potatoes in half down the middle.
  6. 6Use a fork to mash the sweet potato on the inside until it’s mushy, like mashed potato vibes.
  7. 7Add a quarter of the cooked beef to the sweet potato.
  8. 8Add 100 grams of diced tomatoes, using a fourth of it, on top of the beef.
  9. 9Put 80 grams of plain non-fat Greek yogurt mixed with a little water into a squeeze bottle to thin it out and squirt it on top of the tomatoes.
  10. 10Cut up one avocado, put it in a bowl, add a little garlic powder, sea salt, black pepper and a little squeeze of lime juice.
  11. 11Mash the avocado with a fork.
  12. 12Evenly distribute the mashed avocado onto your sweet potatoes, just a little dollop on top will do.
  13. 13Add a little bit of chopped cilantro on top for funzies.

Tips

  • If you want to meal prep these, definitely recommend keeping the guacamole on the side in a container, and make sure you add enough lime juice so that it preserves the guacamole, otherwise it’s gonna turn brown. I’d also recommend keeping the Greek yogurt on the side, the squeeze bottle might be worth it. You can just squeeze it on as you go to eat. This will take 2 minutes in the microwave to heat up.
