High Protein Chipotle Steak Bowl

Directions

  1. 1Season your steak with garlic powder, parsley, paprika, cumin, salt, pepper, and olive oil.
  2. 2Mix the steak until the color changes.
  3. 3For the green sauce, add avocado, fat-free yogurt, coriander, garlic, salt, and pepper to a blender.
  4. 4Blend until smooth and creamy.
  5. 5Cook the steak for 10 minutes until you get a nice crust, 5-6 minutes on each side.
  6. 6Make the salsa with tomato, red onion, bell pepper, coriander, salt, pepper, and lime juice.
  7. 7Distribute into four equal servings.
  8. 8Serve and enjoy.

  • 140 g Cooked Coriander Lime Rice
  • Shredded Lettuce
  • Black Beans
  • Sweetcorn
  • Shredded Cheese

Tips

  • Marinate the steak for as long as possible, overnight works perfectly for added flavour.
  • When cooking the steak, make sure the heat is not too high, you don’t want the spices to burn. Depending on the thickness of the steak, cook 4 mins each side then repeat 2 mins each side.
  • For easy reheating, store the lettuce, salsa, sweetcorn, beans and avocado sauce separately then add to the bowl when ready to eat.
  • You can make the salsa and avocado sauce in advance and store in the fridge for a few days for future use.
