Directions

  1. 1tenderize the chicken breasts on both sides using a meat tenderizer to break up connective tissue for tenderizing, even cooking, and better marinade penetration.
  2. 2Generously season both sides of the chicken with salt, pepper, and a good quality seasoning, such as Kinder's Carne Asada seasoning.
  3. 3Rub the seasoning into the chicken to ensure it adheres well.
  4. 4Place the seasoned chicken into a Ziploc bag.
  5. 5Add a little bit of olive oil to the bag with the chicken.
  6. 6Seal the bag and massage the chicken to distribute the oil and seasoning.
  7. 7Let the chicken marinate in the fridge overnight for at least 24 hours.
  8. 8Heat a pan to medium heat.
  9. 9Place the marinated chicken breasts in the hot pan to sear.
  10. 10Cook the chicken for 5 minutes per side.
  11. 11After cooking, remove the pan from the heat, cover it with a lid, and let the chicken sit for 10 minutes.
  12. 12Once fully cooked, place the chicken into a KitchenAid mixer to shred it.
  13. 13Return the shredded chicken to the pan to absorb all of the sauce from cooking.
  14. 14Prepare the sauce by blending 1/2 cup plain Greek yogurt, 2-3 tablespoons mayo, 1 chipotle pepper in adobo sauce (with some sauce from the can), juice from 1 lime, garlic powder, salt, and pepper.
  15. 15In a bowl, place the shredded chicken at the bottom.
  16. 16Add cheese on top of the chicken.
  17. 17Add diced tomatoes, onions, jalapeños, and bell peppers (similar to pico de gallo ingredients) to the bowl.
  18. 18Drizzle the prepared chipotle adobo sauce generously over the toppings.
  19. 19Sprinkle fresh cilantro on top.
  20. 20Add a little bit more salt and pepper to taste.
  21. 21Squeeze some fresh lime juice over the ingredients.
  22. 22Serve and enjoy the taco bowl as is, with chips, or as a taco or burrito filling.

Tips

  • Desh-carding or jacarding the meat helps tenderize it, cook more evenly, and allows marinade to penetrate faster, resulting in a more flavorful dish.
  • Use a good quality seasoning and apply generously, covering both sides of the chicken.
  • Cook chicken for 5 minutes per side, then turn off the heat and let it sit with the lid on for 10 minutes to ensure juicy results.
  • You can customize toppings with ingredients like canned corn, canned beans, or avocado.
  • The chicken reheats well, and if you cut all the veggies fresh, preparation takes only about 10 minutes.
  • The chipotle adobo sauce is the most important ingredient and makes the meal.
