1In a bowl, mix 1/3 cup of flour, 1 scoop of protein powder, 1 tablespoon of graham cracker crumbs, a dash of cinnamon, and a dash of salt.
2In another bowl, mix 2 tablespoons of melted butter, a wee little drop of vanilla extract, 1 tablespoon of brown sugar sweetener, and 3 tablespoons of granulated sugar or sweetener.
3Add 2 tablespoons of applesauce to the wet ingredients and mix.
4Combine wet and dry ingredients and mix well.
5Form the cookie dough into balls and roll them in graham cracker crumbs.
6Place the cookie dough balls on a baking sheet.
7Bake the mini cookies at 400° for 6 minutes, and the larger cookie for 9 minutes.
8Let them chill for about 10 minutes.
9Meanwhile, prepare the frosting by mixing 1/2 cup of greek yogurt, 10g of pudding mix, a dash of butter extract, and a tablespoon of sweetener.
10Microwave the frozen blueberries for 30 seconds and mash them up.
11Frost the cookies and top with the blueberry mash.
