Peel and slice the daikon and carrot into rounds.

Sprinkle the vegetable slices with 1 tbsp salt and mix well.

Let the vegetable mixture rest.

Finely chop the chili, ginger, garlic, and shallot.

Prepare the pickling brine by combining vinegar, sugar, water, salt, and the chopped aromatics in a bowl and stir until dissolved.

Wash and rinse the salt off the daikon and carrots.

Add the brine mixture to the daikon and carrots and mix well.

Place the pickles into a glass jar for storage.

5 whole red chili
3 clove garlic
1 small ginger root
1 whole shallot
1/4 cup rice vinegar
1/4 cup sugar
1/4 cup water
1 tsp salt

Tips
The pickles are ready to serve after about 10 minutes.
Store in the refrigerator for a shelf life of up to 6 weeks.
