Pickled Daikon and Carrot

Directions

  1. 1Peel and slice the daikon and carrot into rounds.
  2. 2Sprinkle the vegetable slices with 1 tbsp salt and mix well.
  3. 3Let the vegetable mixture rest.
  4. 4Finely chop the chili, ginger, garlic, and shallot.
  5. 5Prepare the pickling brine by combining vinegar, sugar, water, salt, and the chopped aromatics in a bowl and stir until dissolved.
  6. 6Wash and rinse the salt off the daikon and carrots.
  7. 7Add the brine mixture to the daikon and carrots and mix well.
  8. 8Place the pickles into a glass jar for storage.

Tips
