Creamy Cajun Chicken Pasta

Directions

  1. 1Boil water in a pot with salt.
  2. 2Pour in the pasta and cook until al dente.
  3. 3Drain the pasta water and set the pasta aside.
  4. 4Place chicken breasts into a Ziploc bag.
  5. 5Use a meat tenderizer to flatten the chicken breasts slightly to ensure faster cooking.
  6. 6Add oil to the chicken breasts.
  7. 7Season the chicken breasts with Cajun seasoning, onion powder, garlic powder, dry parsley, paprika, and Old Bay.
  8. 8Rub the seasoning into the chicken breasts.
  9. 9Heat 3 to 4 tablespoons of oil in a nonstick skillet until hot.
  10. 10Place the seasoned chicken breasts in the skillet.
  11. 11Cook the chicken for about 5 to 10 minutes, keeping an eye on it to prevent burning and to ensure it cooks through.
  12. 12Flip the chicken once one side is golden brown and cooked.
  13. 13Remove the cooked chicken from the skillet and set it aside to rest.
  14. 14In the same skillet, add about 1 tablespoon of butter.
  15. 15Add chopped onion, chopped red bell peppers, and diced tomatoes to the skillet.
