Take the membrane off of the ribs.

Completely cover the ribs in a Dijon mustard binder.

Season the ribs thoroughly with your favorite barbecue rubs.

Pat in the seasonings with your hand.

Flip the ribs over and repeat the seasoning process on the other side.

Let the seasoned ribs sit out for 30 minutes so the rubs can start penetrating into the meat.

Throw the ribs on the smoker at 315° for 1 hour.

Bring the ribs inside and place them on some butcher paper.

Cover the ribs with brown sugar, tabs of butter, and honey.

Seal up the butcher paper tightly.

Take a couple layers of aluminum foil and completely cover the butcher paper to keep all moisture and heat inside.

Cook the ribs for another hour at 325° with the meat side down.

After an hour, let the ribs sit for at least 30 minutes.
