  1. 1Take the membrane off of the ribs.
  2. 2Completely cover the ribs in a Dijon mustard binder.
  3. 3Season the ribs thoroughly with your favorite barbecue rubs.
  4. 4Pat in the seasonings with your hand.
  5. 5Flip the ribs over and repeat the seasoning process on the other side.
  6. 6Let the seasoned ribs sit out for 30 minutes so the rubs can start penetrating into the meat.
  7. 7Throw the ribs on the smoker at 315° for 1 hour.
  8. 8Bring the ribs inside and place them on some butcher paper.
  9. 9Cover the ribs with brown sugar, tabs of butter, and honey.
  10. 10Seal up the butcher paper tightly.
  11. 11Take a couple layers of aluminum foil and completely cover the butcher paper to keep all moisture and heat inside.
  12. 12Cook the ribs for another hour at 325° with the meat side down.
  13. 13After an hour, let the ribs sit for at least 30 minutes.
