1Heat a large skillet over medium-high heat. Brown 1 lb of ground beef with chopped onion. Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika. Drain any extra grease from the meat.
2Add the ketchup, mustard, and pickle juice. Stir well.
3Spray a 9x13 dish with cooking spray. Combine diced hash browns, ground beef, sour cream, condensed cheddar soup, 1 cup of shredded Colby Jack cheese. Mix together well and spread out evenly in the pan. Top with 1 more cup of shredded cheese and then bacon.
4Bake at 400 degrees F covered with foil for 1 hour.
