In a bowl, combine salt, pepper, paprika, garlic powder, onion powder, cumin, chili powder, and oregano to make the taco seasoning. Mix well.
In a pan, heat clarified butter or oil, add diced onion, and sauté for a minute or until fragrant.
Add ground beef to the pan and cook on medium heat until it changes color.
Add fresh minced garlic, mix, and season with taco seasoning, then add tomato paste. Mix and sauté for 2-3 minutes.
Taste and add more salt if needed, then add warm water and cook for 8-10 minutes or until the beef is fully cooked and the water has evaporated.
In a bowl, mix finely chopped onions, diced tomatoes, freshly chopped cilantro, lime juice, salt, and black pepper to make the pico de gallo.
In another bowl, combine mayonnaise, sour cream, buttermilk or water, taco seasoning, lime juice, and dried parsley. Mix until creamy and smooth to make the taco sauce.
In a pan, heat oil on medium heat, place tortillas, add shredded cheese, and top one side with beef.
Close the tortilla by flipping one half over the other, then cook until crispy and golden.
Serve warm with pico de gallo and taco sauce.
