Directions
- 1Mince your garlic, mince the jalapeno, zest your lime, crumble the cotija cheese, and mince the cilantro.
- 2Fry your corn in a pan of medium-high heat with a drizzle of oil until slightly charred.
- 3Remove the corn from the pan into a bowl.
- 4Add sour cream, mayo, garlic, jalapeno, zest and juice of the lime, paprika, chili powder, and salt & pepper to the bowl with the corn.
- 5Mix the street corn slaw ingredients and set it aside.
- 6Mix the ground chicken with the garlic powder, onion powder, paprika, and salt & pepper.
- 7Spread a thin layer of chicken over each corn tortilla.
- 8Fry the chicken-covered tortillas in a pan on medium heat for a few minutes on each side.
- 9Remove the tacos once the chicken has a nice sear and is cooked through.
- 10Add a couple spoonful's of the corn slaw to the chicken taco.
- 11Add some crumbled cotija cheese and fresh cilantro.
- 12Add more lime juice if desired.
- 13Enjoy the tacos.

- 1 cup frozen corn
- 0.5 cup sour cream
- 0.5 cup mayo
- 3 garlic cloves
- 1 jalapeno
- 1 juice of lime
- 1 zest of lime
- 1 tsp paprika
- 1 tsp chili powder
- to taste salt & pepper
- 10 corn tortillas
- 450 g ground chicken
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt & pepper
- cotija cheese (for garnish)
- cilantro (for garnish)
