1Season and marinate the beef steaks (cut into cubes) with salt, garlic powder, parsley, cumin, smoked paprika, lime juice, and olive oil for at least 30 minutes.
2Cook the marinated steak bites in some light butter on medium high heat for 2-3 minutes per side until a nice brown crust forms. Avoid overcrowding the pan.
3Bake or air fry the cubed raw white potatoes for 20-22 minutes at 200°C / 400°F.
4For the chipotle creamy potatoes, cook the chopped garlic cloves and chopped red onion for 5 minutes until soft.
5Add Italian herbs and chipotle chilli paste to the cooked garlic and onion, mixing it in well.
6Add light evaporated milk, light cream cheese, and grated Parmesan cheese to the mixture.
7Mix the sauce on low heat until smooth; it does not need to be cooked.
8Add the cooked potatoes to the creamy chipotle sauce.
9Garnish with freshly chopped parsley.

Tips
Season and marinate your steak bites for at least 30 mins for better flavour.
Cook the steak bites on medium high heat for 2-3 mins each side in some butter to get a nice brown crust.
Don’t overcrowd the pan when cooking steak bites.
Cook the garlic and onion for 5 mins till soft then add the herbs and chipotle paste, mixing well before adding the milk.
You do not need to cook the sauce, just mix it on low heat till smooth then add the potatoes.
