1Chop the potatoes into cubes and place into a bowl. Spray with some oil, then season with smoked paprika, garlic powder, cumin and salt.
2Transfer to your air fryer and cook at 200 degrees Celsius for 20 minutes, shaking halfway. They should be crispy and cooked through, if not, cook a little longer.
3Dice the tomatoes and red onion. Place into a bowl and mix with chopped fresh coriander, lime juice, and salt.
4For the sauce, mix the yogurt, sour cream, chipotle paste, lime, garlic powder, and salt.
5Add some milk to loosen it and that's the sauce.
6Heat a pan over medium-high. Add a little oil, then the mince, and cook 4–5 minutes, breaking it up.
7Stir in chipotle paste, tomato paste, cumin, paprika, grated garlic, salt and pepper.
8Cook for 1 minute, add the water and cook for another minute.
9Finish with a squeeze of lime juice.
10Serve the chipotle beef with the crispy potatoes and salsa on the side. Drizzle the sauce on top and garnish with fresh coriander.
