Homemade Yeast Rolls

Directions

  1. 1In a mixing bowl, combine warm water, active dry yeast, and one tablespoon of brown sugar. Set aside to bloom.
  2. 2Scald one cup of milk and let it cool to lukewarm.
  3. 3Cream together softened butter and the remaining tablespoon of brown sugar until smooth and fluffy.
  4. 4Mix in the bloomed yeast mixture into the creamed butter and sugar.
  5. 5Add the lukewarm milk and mix well.
  6. 6Add the beaten eggs and mix.
  7. 7Sift in half of the flour and salt, mix until almost fully incorporated. Add the remaining flour and mix until a dough forms.
  8. 8The dough is too soft to knead, so mix it hard for about a minute or two.
  9. 9Cover the dough and let it rise for about an hour, until doubled in size.
  10. 10Punch down the dough.
  11. 11Divide the dough into 12 equal portions and shape them into rolls.
  12. 12Place the rolls in a lightly greased 9x13 inch pan.
  13. 13Brush melted butter over the rolls.
  14. 14Cover the rolls with plastic wrap and a tea towel. Let them rest and rise for another 30 minutes to an hour, until doubled in size.
  15. 15Brush with more melted butter and bake at 400°F for 18-20 minutes.
