Stuffed onions with yolk, truffle and Grana Padano cheese sauce

Directions

  1. 1Pour salt into a baking dish.
  2. 2Place the onions on top of the salt in the baking dish.
  3. 3Bake the onions until they are roasted.
  4. 4Cut the top of each roasted onion.
  5. 5Scoop out the inner layers of the onions, leaving a hollow shell.
  6. 6Finely chop the scooped-out onion pieces.
  7. 7In a pan, melt butter with olive oil.
  8. 8Add the chopped onions to the pan and cook until soft and caramelized.
  9. 9In a separate saucepan, melt butter.
  10. 10Add flour to the melted butter and stir to create a roux.
  11. 11Pour milk into the saucepan and whisk until a smooth sauce forms.
  12. 12Grate Grana Padano cheese into the sauce and mix until combined.
  13. 13Fill each hollowed-out onion with a spoonful of the caramelized onion mixture.
  14. 14Place an egg yolk on top of the caramelized onions in each onion shell.
  15. 15Season with a pinch of salt.
  16. 16Add slices of truffle on top of the egg yolk.
  17. 17Spoon the Grana Padano cheese sauce over the egg yolk and truffle.
  18. 18Grate more Grana Padano cheese on top of each stuffed onion.
  19. 19Bake until the cheese is golden and bubbly.
  20. 20Serve and enjoy by dipping bread into the warm, runny yolk and sauce.
